Independent Forums: What is your favorite food? Nicole Atchison: A breakfast sandwich with plant-based egg, sausage, and cheese


Independent Forums: Who or what has inspired you this year and why? Nicole Atchison: People who have been in the industry a long time and are seeing transformative growth; their dedication and belief in the system created the foundation for the movement we find ourselves in today.


Independent Forums: What is your biggest source of motivation? Nicole Atchison: Bringing my parents' vision to life.


Independent Forums: How would you describe a typical day? Nicole Atchison: Balancing activities on long-term strategies around partnerships and innovation (i.e. meetings) with near-term problem solving and growth-scaling management (i.e. meetings) – so a lot of meetings with the incredible PURIS team and partners!


Independent Forums: What’s one thing about you that most people don’t know? Nicole Atchison: I played volleyball in college at Iowa State University.


Independent Forums: What’s one thing about your organization that you wish more people knew?

Nicole Atchison: How much time and energy we spend in the field developing new varieties of non-GMO pea, soy and corn that are the building blocks for a regenerative agriculture system.


Independent Forums: Where do you see the biggest opportunity for transformation within the food system?

Nicole Atchison: Reducing dependence on synthetic nitrogen using natural methods like legumes and newer microbial technologies.


Independent Forums: What are you most looking forward to at Future Food Systems 2022? Nicole Atchison: Hearing the visions of so many amazing leaders in the industry.
